Deliciously Quick Beefless Vegetarian Burrito Recipe
This simple vegetarian meal can be whipped together in 15 minutes or less.

If you know anything about me, you know that I've struggled to cultivate a healthy relationship to food. However, now that I'm actively in the gym, food is an absolute must. Throwing ingredients I love together is my specialty. When you dive deep into what your taste buds are feeling, it's easy to whip something up.
With this recipe, majority of it is pre-cooked and simple. That's also why it happens to be vegetarian. I'm not vegetarian, but I do love ease! That's exactly what this meal is. Let's get into it.

Why use beefless ground beef?
Choosing a beefless option for your burrito comes with many nutritious ingredients while maintaining taste and texture. Meat alternatives, such as beefless ground beef, are plant-based alternatives that are nutritious, vegetarian and have a potential 50% lower environmental impact. However, if you're looking to pack calories and protein, traditional ground beef is better. Beefless ground beef can also be high in sodium, so make sure to consult a healthcare professional or a dietitian to determine what best suits your nutritional needs. Personally, I love beefless ground beef because it's pre-cooked and healthy.
Why use intuitive measurements?
Intuitive measurements ensures the cooking process is simple, but it also allows you to learn what works best for you and your meals. You can add various items and spices to your liking. Personally, measuring intuitively allows me to connect better with my body and my desires. It's not the best when you're calorie counting to gain weight, so If that's your mission, I would recommend aiming for 1-2 servings (or more) of whatever ingredient you're using! Pack those calories in, but remember: do what feels good to you.
Now, let's jump into the meal!
Ingredients You'll Need:
- Trader Joes Flour Tortilla
- Trader Joes Rice Medley
- Trader Joes Crumbled Feta Cheese
- Trader Joes Colorful Carrot Coins
- Trader Joes Beefless ground beef (12 oz)
- Cucumber
- Organic Baby Spinach
- Sour Cream
- Optional: Avocado
Instructions:
- Heat the tortillas lightly on a skillet or in the microwave to make them pliable for wrapping.
- Microwave the rice medley package for 3 minutes.
- Chop fresh cucumbers.
- Prep a pan with a small amount of olive oil.
- Add the beefless ground beef and heat for 4-5 minutes.
- While the ground beef is heating up, microwave your desired amount of colorful carrot coins for 4.5 minutes.
- Lay out the warmed tortilla and spread the source cream. Spoon the beefless mixture, spinach, rice, cucumbers, cheese, and any additional toppings of your choice onto the center. Fold the sides inward, then roll tightly.
Optional: add half an avocado.
